Warm Bacon Artichoke Dip with Grilled Pita

INGREDIENTS

  • Nonstick cooking spray
  • 8 slices thick-cut bacon, chopped
  • 1 can (14 ounces) artichoke hearts in water, drained
  • 4 (½-inch-thick) slices yellow onion
  • 5 (6-inch) loaves thick pita bread
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 tablespoon chopped fresh parsley

DIRECTIONS

  1. Preheat oven to 375°; spray 8-inch square baking dish with cooking spray. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; with slotted spoon, transfer to paper towel-lined plate.
  2. Heat grill pan over medium-high heat. Spray artichokes and onion with cooking spray; place on hot grill pan and cook 5 minutes or until grill marks appear, turning once. Transfer vegetables to cutting board; cool slightly and chop.
  3. Spray bread with cooking spray; place on hot grill pan and cook 1 minute or until lightly toasted and grill marks appear, turning once. Cut each loaf into 6 wedges.
  4. In medium bowl, stir cheese, parsley, bacon, artichokes and onion; spread in prepared dish and bake 20 minutes or until heated through. Makes about 4 cups.
  5. Serve dip with pita wedges.
